Coffee Brewing Methods and Guides
Espresso is a well-known concentrated coffee brewing method. The espresso shot is achieved by forcing hot water under pressure through finely-ground coffee beans.
It forms the base for many popular coffee drinks and delivers a rich, intense flavour with a characteristic crema on top.

Brewing Guide
- Grind 7-10g of Scorgo coffee beans for a single shot or 16-20g for a double shot
- Distribute grounds evenly in the portafilter and tamp firmly
- Lock the portafilter into the espresso machine
- Extract for 25-30 seconds to yield 30-40ml of espresso
- Serve immediately for best flavour
Tip: The ground coffee needs to be to a fine consistency
The Hario V60 Pour Over is a manual brewing method that involves pouring hot water over coffee grounds in a filter.
This technique allows for precise control over brewing variables, resulting in a clean, nuanced cup that highlights the coffee's unique characteristics.

Brewing Guide
- Place filter in dripper and rinse with hot water
- Add 15g of medium ground Scorgo coffee to the filter
- Pour 30g of water to bloom the grounds for 30 seconds
- Slowly pour remaining water in circular motions to reach 250g total
- Allow coffee to drip through completely, about 3-4 minutes total

Brewing Guide
- Insert filter into cap and rinse with hot water
- Add 15g of medium fine Scorgo ground coffee to the chamber
- Pour 200ml of water heated to 80-85°C over the grounds
- Stir gently for 10 seconds
- Insert plunger and press down slowly for 30 seconds
The Moka Pot is a stovetop coffee maker that brews coffee by passing boiling water pressurised by steam through ground coffee.
It produces a strong, espresso-like coffee and is a staple in Italian households.

Brewing Guide
- Fill the bottom chamber with water up to the valve
- Add finely ground Scorgo coffee to the filter basket without tamping
- Screw the top and bottom chambers together tightly
- Place on medium heat and leave the lid open
- Remove from heat when coffee fills the upper chamber and close lid
A Cold Brew is made by steeping coarse coffee grounds in cold water for an extended period.
This method produces a smooth, naturally sweet concentrate with low acidity that can be enjoyed over ice or diluted with water or milk.

- Combine 100g of coarse ground Scorgo coffee with 1 litre of cold water
- Stir gently to ensure all grounds are saturated
- Cover and refrigerate for 12-24 hours
- Strain through a fine mesh sieve or coffee filter
- Dilute concentrate with water or milk to taste and serve over ice
The cafetière, also known as a French Press, is a classic brewing method that uses a plunger to separate coffee grounds from the brewed coffee.
It produces a full-bodied, richly flavoured cup.

- Steep for 4 minutes

What Grind Size Do I Need?
You will find that the grind size can vary based upon the coffee you are using and the type of drink you are preparing but we can offer you some general recommendations.
- Espresso - Fine
- Moka Pot, V60, AeroPress - Medium to Fine
- Drip coffee makers - Medium to Coarse
- Cold Brew - Coarse
- French Press / Cafetiere - Coarse
Why Does My Coffee Taste Bitter or Sour?
Bitterness
This is likely due to over-extraction.
Try using a coarser setting when grinding your beans.
Dialing in your grind size for each bean can be trial and error but persevering will yield a delicious flavour and an amazing aroma.

Sourness
If your coffee tastes a little too weak or sour, it is probably due to under-extraction.
Try using a finer setting when grinding your beans.

I don't get a taste of all the flavour notes in my coffee. Why?
The flavour notes are not created by additives or flavourings. It is formed from several components.
- Origins
- Type of bean
- Its variety
- How it has been processed
- Roasting style (we roast to medium only)
This is why different origins of beans offer different flavour notes.
The flavour notes and their intensity depend on many things.
- Your palate
- If you have added any sugars, honey or anything else to the brew
- The quality of the water
- The grind size
- Brewing time & temperature
- Brewing method
- Coffee freshness; beans tend to last longer than ground
- How the coffee has been stored
Do You Offer Brewing Recommendations and Tips?

We know our coffee inside out and generally our beans are suitable for most brewing methods.
However, we offer some suggestions in our Brewing Guides.
How Should I Store My Coffee?
This is an important question and we have a few recommendations below.
- Don't freeze or refrigerate your Scorgo coffee
- Store your Scorgo coffee in the packaging that it is sent to you in or a vacuum sealed container
- Always consume before the use by date on your packaging
- Refrain from grinding all of your beans at once. This reduces the lifespan of the coffee because ground coffee doesn't maintain its freshness as long as whole coffee beans
- If you do grind it, consume it within 14 days of it being ground
Just something to consider and look out for; when purchasing other brands of coffee, check when the roasting date was. You may find that it was roasted months before you purchased it. We are confident that any coffee that is more than 3-months post-roast will not be how you expect it to be.
How Long Should I Let My Coffee Beans Rest?
Our roast profiles are tuned through practice but during this process the coffee beans release large amounts of carbon dioxide.
The gas is contained within the beans and released following the roasting process.
When brewing coffee beans with hot water, a process of further releasing carbon dioxide is initiated. This time it is forced to escape rapidly.
We recommend leaving our coffee beans to rest for up to 7 to 10 days after they have been roasted. We have designed our roast profiles this way to ensure you get fresh delicious coffee that is not going to have the flavour notes hindered in the extraction process.
Are Your Beans Ethically Sourced?
The short answer is yes.
Our suppliers only source beans via direct trade to ensure fair practices are adopted and high quality beans are sourced.
Following this ethos means the farmers get better prices for their seeds and we can roast better quality beans.
We are a family-run roastery with very rigid personal & business morals & values so this approach fits naturally into our busines model.
What is Specialty Coffee?
These beans are higher quality coffee. Their quality and taste can be identified quite easily.
They are not 'normal' coffee beans and they certainly don't taste like your average coffee beans.
Coffee is graded using a standardised industry process which is set by the Specialty Coffee Association (SCA). The process of grading coffee includes giving it a score out of 100. Any coffe that scores over 80 points is graded as specialty.
Within Scorgo we don't stop there! We ensure that when sourcing our products, not just coffee, it is done through fair trade or ethically sourced as it's coined within the industry.
We repeat within our business model a lot that we live ot strong personal and professional morals and this is one area that we really champion our ethos.
All coffee from our Signature, Prestige & Limited Edition Collections is specialty graded coffee. In the product description you will see the SCA score that was given to that specific product.
Is Your Packaging Recyclable?
Yes, our delivery boxes, packaging and coffee bags are all recyclable.
How Often Do You Roast?
Our operations are aligned to producing excellent coffee for our customers and maintaining effective production procedures.
We generally roast to order within the scope of our fluid production days and we have an effective tool to predict sales.
We find by adopting this approach, we can provide our customers with delicious fresh coffee, reduce waste, avoid our coffee being stored on shelves and maximise our time management to focus on delivering excellent customer service and growing our business.
